Mansuri rice, known locally as Aijong rice, is a popular, aromatic, medium-grain variety primarily grown in Southern India and the North-Eastern state of Assam. Characterized by a grain length of approximately 5-5.2 mm, it offers a delicate aroma, subtle sweet flavour, and cooks into a soft, fluffy, non-sticky texture. Highly valued for its versatility, it is an easily digestible, low-starch option often used for everyday consumption as plain rice with curries, and is also well-suited for dishes like biryani, pulao, idlis, and pongal.
